Mezcal is made from Espadín agave, the most commonly used species for mezcal, which guarantees its quality taste and aroma. Agave hearts (piñas) are traditionally roasted in underground pits, which gives mezcal its characteristic smoky flavor. Natural fermentation takes place in wooden vats using wild yeast, which contributes to the authenticity and complexity of the flavors. Double distillation in copper stills perfects the flavors and ensures the high quality of the final product.
