Lumi vodka from Estonian distillery Moe Distillery is a bit of an exception among their products. It is made from winter rye from Finland. Even the name "Lumi" means snow in Finnish. Snow, which plays an important role in the cultivation of winter rye. In winter, they leave the rye under a layer of snow for some time.
