Emperor Deep Blue London Bridge Sauternes Finish is an exclusive Mauritian rum, produced by a combination of traditional and modern distillation processes. After distillation, the rum is first matured for 12 months in old barrels of sweet white wine Château Clos Haut-Peyraguey – Grand Cru Classé 1855 from the Sauternes region of Bordeaux. It is then bottled and immersed in an underwater cellar in Brittany, France, where it matures at a depth of 60 meters below sea level at a constant temperature of 11–13 °C, in complete darkness, without access to oxygen and at a pressure of 6 bars. This unique method of maturation lasts 9 months and gives the rum an exceptional character.
This rum is part of the limited edition "Deep Blue", of which only 2,000 bottles were produced.
